FAQ & allergens

The things people ask us.

Allergens, lead times, pickup windows, holiday ordering, and more. If your question isn't here, just call the bakehouse.

Allergen information

WheatGlutenDairyEggsTree nutsSoySesame

All items are made in a shared facility that handles wheat, dairy, eggs, tree nuts, soy, and sesame. Cross-contact is possible on every product; we cannot guarantee any item is free of a given allergen. Each item on the menu lists its primary allergens. If you have a severe allergy, please tell a baker before you order.

Our promise

Is everything really baked daily?

Yes. The ovens light before dawn and everything in the case is baked that morning. We don’t hold product overnight — when an item sells out for the day, it’s gone, and we start fresh the next morning. Order-ahead by 8pm to reserve what you want.

Allergens

How do you handle allergens?

Our products contain and our kitchen handles wheat/gluten, dairy, eggs, tree nuts, soy, and sesame. Everything is made in a shared facility, so cross-contact is possible on every item — we cannot guarantee any product is free of a given allergen. Each menu item lists its primary allergens; please ask a baker if you have a severe allergy.

Custom cakes

How far ahead do I need to order a custom cake?

Standard custom cakes need at least 72 hours’ notice. Tiered and wedding cakes need 3–4 weeks and include a tasting. Rush orders inside the window may be possible for a 25% fee when our schedule allows — call us.

How does the deposit work?

A 50% deposit confirms your custom-cake order; the balance is due at pickup. Cancel 72+ hours before pickup for a full deposit refund. Inside 72 hours the deposit is non-refundable because we’ve already sourced ingredients and scheduled the bake.

Pickup & pre-order

How does pickup and pre-ordering work?

Reserve loaves, pastries, and cookies online by 8pm for next-day pickup; we set them aside under your name at the counter. Saturday loaf pre-orders close Friday at 8pm. All custom cakes are pickup at 48 Lexington Ave during open hours.

Do you take holiday orders?

Yes — Thanksgiving, Christmas, and Easter orders open about three weeks ahead and close early because they fill quickly. Watch the FRESH TODAY board and our Instagram for the exact cutoff dates each season.

Dietary

Do you have vegan or gluten-free options?

We bake a few vegan items (like our rosemary focaccia) and they’re marked on the menu. We are not a gluten-free facility — flour is airborne throughout the bakehouse — so we don’t offer gluten-free baking and can’t guarantee any item is safe for celiac. We’d rather be honest than risk it.

Wholesale

Do you sell wholesale or cater?

Yes — we supply bread and pastry to a handful of Asheville restaurants and shops, and we make pastry boxes, cookie platters, and dessert spreads for offices and events. We’re a retail bakehouse, so we bake the food; we don’t staff or stage events. See the Catering & Wholesale page and give us at least 48 hours’ notice.
